Nancy’s Applesauce Cake
3 cup flour
2 cup applesauce
3 eggs
1-1/2 cup sugar
2 tsp. soda
1 cup butter
1/2 tsp. cinnamon
1/2 tsp. cardamon
1/2 tsp. nutmeg
1 cup raisins
1 cup black walnuts
1/2 cup coconut
1 tsp. vanilla

Cream the butter and sugar together; add eggs, beating well. Mix flour and spices, then add to creamed mixture along with the applesauce. Stir in raisins, nuts, coconut and vanilla. Pour mixture into a greased and floured bundt pan and bake at 350 degrees for 1 hour or until done. Let cake stay in pan until cool. Use a knife to loosen from sides and middle. This cake freezes well.

Icing for Applesauce Cake:
4 Tbsp. butter
1 cup brown sugar
2 Tbsp. milk or cream
1 cup black walnuts (optional)

Melt butter in saucepan. Add brown sugar and milk or cream. Stir until well blended. Cook for two minutes. Remove from burner and add nuts. Place pan in cold water. Stir until icing thickens. Drizzle over cake.
